Mango & Papaya Salad

This is such a quick and easy light dinner, or great accompaniment to fish or chicken. Would also go great with the addition of prawns if you’ve got any lying around! Its really versatile and you don’t have to stick strictly to the ingredient list – most crunchy veg would work! I love it because I’m addicted to those Thai flavours in the dressing, can’t get enough!

Serves 2

Ingredients:

For the salad

  • 1 large banana shallot, peeled
  • 1 small carrot, peeled
  • 1 yellow pepper
  • 1 red chilli
  • 4 spring onions
  • 2 baby courgettes
  • 1 large mango
  • 1 green papaya
  • 1 avacado, peeled and destoned
  • 1 handful coriander, finely chopped
  • 1 handful roasted peanuts, unsalted, roughly chopped

For the dressing

  • Juice 1 large lime
  • 1/2 tbsp sesame oil
  • 1tbsp dark soy
  • 1/2 tbsp fish sauce
  • 1 tsp palm sugar
  • twist black pepper

Method:

  1. Julienne the carrot, shallot, pepper, chilli, courgettes
  2. Peel the mango, avacado and papaya and cut into thin, 0.5cm strips

  3. Cut the spring onions lengthways

  4. Combine all above in a bowl.

  5. Combine all ingredients for dressing and stir well so the palm sugar dissolves

  6. Toss ingredients in the dressing and top with roasted peanuts.
