Taking advantage of a rare full day of sunshine in this rapidly cycling summer we are having we decided to fit in another BBQ. Having only bought our first proper BBQ this summer (no more disposable jobs for us!) we are keen to use it as much as possible!
We had some chicken thighs and legs in the freezer, marinated in a hot and spicy sauce, and also a couple of bavette style steaks. We made a quick chimichurri dressing for these using this recipe from bbcgoodfood.com. These, along side a couple of great salads including the divine mango salsa and some lovely foccacia (shop bought – naughty!) made for a fabulous quick summer evening supper. Have a go at this chimichurri – its gorgeous. Be adventurous with your BBQ-ing; spruce up the boring old sausages and burgers with herbs and spices, experiment with marinades and dressings. It makes for a much more exciting meal 🙂
