Tonights idea from my meal plan for this week was to make a Goan Prawn Curry. This was to be the second thing I had made with the help of a ‘Spicentice’ packet. They do include a recipe and list of ingredients, which I have followed parts of but also added and changed a few little things. The main ease of these is not having to bother sorting out all your quantities of ground spices and whole spices, or having to make a paste, which makes the process a whole lot quicker and great for week nights. You could replace with prawns with something different – monkfish maybe or even make it veggie with some chickpeas, mixed peppers and courgettes.
- 200ml tomato passata
- 1 onion
- 1 clove garlic
- 1 tsp ginger paste
- half red chilli, finely chopped
- 100ml coconut milk
- juice half a lemon
- spicentice goan prawn curry pack
- coriander to garnish
- 200g fresh raw king prawns
- Heat 2 tablespoon oil in a large pan or wok, when hot, add ‘Sachet 1’ from the spice pack, fry off for 30 seconds then add the onion.
Fry for a further 4-5 mins then add ‘sachet 2’ from the spice packet, followed by the passata, a pinch of salt and the lemon juice.
Cook for 5 mins, stirring gently. Then add the coconut milk and cook for a further 5 mins.
Turn the heat right down to a simmer and add the prawns. Cook for 5 mins until the prawns are cooked through, being careful not to over cook or they will be tough.
Serve with some rice, and garnish with the coriander.
