Goan Prawn Curry

IMG_2924Tonights idea from my meal plan for this week was to make a Goan Prawn Curry. This was to be the second thing I had made with the help of a ‘Spicentice’ packet. They do include a recipe and list of ingredients, which I have followed parts of but also added and changed a few little things. The main ease of these is not having to bother sorting out all your quantities of ground spices and whole spices, or having to make a paste, which makes the process a whole lot quicker and great for week nights. You could replace with prawns with something different – monkfish maybe or even make it veggie with some chickpeas, mixed peppers and courgettes.

Serves 2

Ingredients

  • 200ml tomato passataIMG_2922
  • 1 onion
  • 1 clove garlic
  • 1 tsp ginger paste
  • half red chilli, finely chopped
  • 100ml coconut milk
  • juice half a lemon
  • salt
  • spicentice goan prawn curry pack
  • coriander to garnish
  • 200g fresh raw king prawns

Method:

  1. Heat 2 tablespoon oil in a large pan or wok, when hot, add ‘Sachet 1’ from the spice pack, fry off for 30 seconds then add the onion.
  2. Fry gently until golden, then add the chilli, ginger paste and garlic.IMG_2923

  3. Fry for a further 4-5 mins then add ‘sachet 2’ from the spice packet, followed by the passata, a pinch of salt and the lemon juice.

  4. Cook for 5 mins, stirring gently. Then add the coconut milk and cook for a further 5 mins.

  5. Turn the heat right down to a simmer and add the prawns. Cook for 5 mins until the prawns are cooked through, being careful not to over cook or they will be tough.

  6. Serve with some rice, and garnish with the coriander.

    That looks fabulous! There is a paella spice packet that I use from tescos – I love it because all the measuring is done for me and it tastes brilliant.

      If you get a chance do try some of their produce – its fab! in general I’m not a fan of ‘ready made’ even sauces/rubs and prefer to make my own, but for ease its necessary sometimes, and these ones are great
